Meal prepping is an absolute must for me. Usually I make two meals at once; One for lunch and one for dinner, but lately it’s been hard to make time to do so. Right now I’ve been making my meals as needed to get through the week. ๐
I know one thing is for certain, if I’m meal prepping, taco bowls will always be in my rotation. These are so good, so filling, and so easy to make! You really only need a ground meat of your choice, rice, veggies, and what ever toppings suit your fancy. ๐ฎ๐ฅฃ
I start by pan-frying my veggies, making sure they’re thawed out enough before I put my meat in. Now you can totally prep your own veggies if you prefer them fresh, me however, I’m all about convenience so I buy a frozen bag of them. Same thing with the rice; If you prefer to cook it, that’s totally okay! I don’t notice a difference in taste and it’s a lot quicker in my opinion.
Once my veggies are thawed, I put in my ground meat of choice. As I’ve mentioned before, eating more mindfully consists of substitutions. I personally use ground turkey, but feel free to use the meat of your choice. I think as long as you season it right, it tastes exactly the same. ๐๐ถ๏ธ
I like to season my meat before its fully cooked and after (I call this my pre and post season). Once everything is all done, I put my rice into a bowl first, followed by my meat and veggie mixture and I put toppings of my choice to serve and enjoy! You can’t go wrong with sour cream and cheese (I use greek yogurt instead of sour cream as a high protein option and it’s amazing). I also like to top it off with a sauce of my choice.
Lately I’ve been loving this chipotle hot sauce from tabasco, it’s super good. The Chipotle closest to where I live started putting it out to top their food with and I tried it out, let’s just say they low-key put me on. But Taco Bell mild sauce is always a classic and works great as well.
